Vegetarian Challenge!

Here goes nothing friends.  Starting TODAY, 10-10-11, Brent and I are challenging ourselves to eat vegetarian for a month and 22 days (up until the day we leave for Maui). I'm being completely honest...I'm extremely nervous about trying this.  I'm not trying to sound creepy or weird, but I LOVE meat....odd I know. I think the challenge will be much more tough for me than Brent.  BUT, we will see.  I will definitely keep you updated on my progress/challenges. Friends, please please please send recipes if you have yummy ones!!! I need, and would love any and all vegetarian recipes!


  1. I love grilled eggplant sandwiches on ciabatta bread. Just slice eggplant and roast in the oven with drizzled olive oil and salt and pepper, about 20 minutes or until soft and then put it on the bread! You can add cream cheese and roasted red peppers (I use the ones in a jar) or even roasted zucchini too. Other easy things is pesto pasta with any type of roasted veggies (I buy pesto in a jar) or if all else fails you can do breakfast for dinner, like scrambled eggs and hashbrowns!

  3. Yum Mandee! The sandwich sounds delicious, I love all of those things, I've never thought to put them on a sandwich. Hello pesto :) Thank you for the tips, I definitely need the ideas!

    Court-yep, Maui here we come!!!...we might not come back..LOL.
